how do you recover documents from Adobe Photoshop that weren't saved because I pressed Ctrl+T on a picture then x and the entire

thing deleted

Go to the directory where the autorecover folder is (if it's hidden go into your settings and change the by default), than you should be able to recover unsaved documents, in other words ALWAYS save your work (trust me I learned the hard way)!
