So, the first part of Stacy's vegetable is definitely tuberous stem. The other part must be root, because it has hairy structures. These hair-like structures have function in the absorption of water and minerals from the soil, examples of stem vegetables are asparagus and kohlrabi. Root vegetable examples are celery root, Yams, beets, onions, turnips, rutabagas, horseradish, carrots,  parsnips, kohlrabi, garlic,  (or celeriac),  turmeric.The root vegetables can grow underground, and has the ability of absorbing  large quantity of amount of nutrients that are present in the soil.
