That is because he is trying to demonstrate a social satire to evidenciate how did that society worked. The medieval society was set on three foundations: the nobility, the church, and the peasantry. Chaucer’s satire targets all segments of the medieval social issues, human immorality, and depraved heart. For example, he exposes each social layers of his pilgrims and beautifully illustrates how they fail to fulfill their actual duties. He further shows the theme of social satire in The Nun’s Priest’s Tale that satirizes courtly love and sets aside standard of dignity. The Wife of Bath’s Tale mocks the religious logic as the wife interprets The Bible verses in her own way to support her argument.

This why some are more complex and others are not; it's a way of mocking, showing it's emptiness and lack of characterization.

I would say B) and C). Her writing evokes powerful pathos(i.e. appeal to emotions). Seeing that she writes about couples, families etc., I'd say that covers the realistic approach, and dramas evoke emotions, so we've covered the B) part. She makes her characters react to situations, which gives the readers a chance to experience intense emotions, i.e. it evokes pathos.
