In order to get b our from under that square root sign, we have to square it.  But if we square that side we also have to square the other side because this is an equation, after all, and we need to keep it in balance.  If we square the right, we undo the square root, and the equation then looks like this: (a+1)^2=b+1.  We will FOIL out the left side to get a^2+2a+1=b+1.  Now, to solve for b, we will subtract the 1 from both sides, leaving us with b=a^2+2a, the first of your choices above.
