The recipe itself already makes 3 dozen = 3*12 = 36 cookies.

For 360 people to get 2 cookies each = 360*2 = 720 cookies

Scale up:

720/36

= 20

So for each ingredient, you provide 20 times that in the recipe.

Ok don't panic!!!

First you look and see that 3 dozen is 36 and you need 720 cookies so that every person gets 2 cookies. so you first need to multiply 36 by 10 to get 360 then multiply that by 2. 

So, in conclusion multipy each of the ingredients by 20! :)

17/16 x 20 = 340/16 of butter
5/8 x 20 = 100/8 of white sugar
7/4 x 20 = 140/4 of vanilla extract
15/8 x 20 = 300/8 of flour
5/6 x 20 = 100/6 of almonds
7/12 x 20 = 140/12 of confectioner's sugar
