We know this by dating the structures, evidence of life there long before anywhere else and by the Bible. You can also look into other sources of history too. There is a ton of info on Egypt provided by scrolls a old writing on stone tablets.

Passover was when the Lord killed all the first born children in Egypt but PASSED OVER the children of Israel. People can't do anything of worth for God. all our works are like filty rags to him. What the people did for God to pass over them is they obeyed Him by painting the blood of a lamb on the doorpost (which is what He commanded them to do). God chose them, they didn't chose God.

Trial by cold water was when the accused was thrown into a pool of water bound. If he/she sank and drowned he/she was innocent (and conveniently dead). If he/she floated and did not sink, he was taken to have been "rejected" by the water and must necessarily be guilty.
