You choose a shape and put it behind the photo taking out the background of the picture and then you change the shapes color

Use the paint bucket tool.

Explanation:

select the background layer, select your color, and use the paint bucket tool. Make sure to unlock the background layer before using the paint bucket tool otherwise it wont work.
