Indeed, since for farmers of the previous centuries food was scarcer due to the lack of technological advances they had to rely on reserves of food. Meats had to be stored in a dry place and profusely salted to reduce the rate of decomposition. The same applied for grains since dampness destroyed them. Cheese in the other hand was more easily stored during winter and since both meat and grains were scarcer sources of proteins during the cold season, cheese was an excellent replacement due to its milky nature.
