The infections caused by eating pork comes from the parasite Trichinella spiralis, which causes trichinosis. Before 2011, the standard in cooking pork was 160° F (71° C). However, in 2011, the United States Department of Agriculture (USDA) updated this recommendation to 145°F (63°C).
