The  Mediterranean climate is very warm and hot in the summer months. This means that 

-the food is different,  mostlyplants that grow in hot areas (wine, olives)
-the architecture is appropriate,  open shaded spaces, good air ventilation 

-there is siesta during the hot hours
-people are  active until late at night

The climate always changes, yes. It’s natural. However, humans have sped it up via things like carbon emissions. One simple example is when you eat a banana and put it in the trash can, when it gets to the landfill it is so trapped it produces methane gas- as do cows.
