The Middle Colonies were called the "breadbasket" because they grew more food than the New England and Southern colonies.  They were the most prosperous colonies in terms of agriculture because their soil was more fertile due to better weather conditions than New England, which in turn made the growing season longer.  The better weather and abundance of food also created a larger population in the Middle Colonies which meant that there were more people available to work on the farms.
