Las bacterias ácido lácticas constituyen un vasto conjunto de microorganismos benignos, dotados de propiedades similares, que fabrican ácido láctico como producto final del proceso de fermentación.  Tienen diversas aplicaciones, siendo una de las principales la fermentación de alimentos como la leche, carne y vegetales para obtener productos como el yogur, quesos, embutidos, mantequilla, crema de leche, entre otros.

La acción de estas bacterias desencadena un proceso microbiano por el cual la lactosa se transforma en ácido láctico. A medida que el ácido se acumula, la estructura de las proteínas de la leche va modificándose, y lo mismo ocurre con la textura del producto. Existen otras variables, como la temperatura y la composición de la leche, que influyen en las cualidades particulares de los distintos productos resultantes.
