Answer: The change of state from water to gas to liquid goes through a process called boiling or such. If you heat a pot of cool water, the temperature of the water rises and the particles move faster and faster as they absorb the heat. The temperature rises until the water reaches the next change of state — boiling. As the particles move faster and faster, they begin to break the attractive forces between each other and move freely as steam — a gas. A gas to liquid is called condensation and as gas particles are cooled that energy is reduced. The attractive forces now have a chance to draw the particles closer together, forming a liquid.

Water has a boiling point of 100 degrees fahrenheit. after reaching this temperature, it will boil and turn into gas. this gas cools and condenses back into a liquid after reaching 32 degrees.

Wissen: you have "knowledge about something" For example, in the first sentence of your problem, if you plug in "Do you have knowledge about the saying" - that sounds clumsy, so "wissen" is not a good candidate (in contrast to the "recognize/kennen" test). But for sentence #2: "(do you have knowledge about) how many people live in Germany" - that sounds like a good fit, and "wissen" is appropriate.

Eventually, with practice you will be able to distinguish the two appropriately and quickly.
