German chemist Eduard Buchner won a Chemistry Nobel Prize in 1907 for his findings on fermentation, which has to do with the chemical desintegration of a substantance. Thus, yeast and bacteria are involved in the processes of relieving heat and causing effervescence. In fact, Buchner could demonstrate that yeast cells could ferment sugar.
