As a safety rule, refrigerated eggs should not be left out more than 2 hours.  
  • All packaged raw shell eggs that were not treated to destroy Salmonella must carry the following safe handling statement:  

       “SAFE HANDLING INSTRUCTIONS: To prevent illness from bacteria:  

        Keep eggs refrigerated, cook eggs until yolks are firm, and cook  

        foods containing eggs thoroughly.”

  • When the exterior temperature of a frozen food are subjected to 23 degrees F or above it can create crystallization which can then degrade food quality.
