Certain organisms called FERMENTERS employ anaerobic respiration in making ATP from sugar. This anaerobic process is called FERMENTATION, which are of two types: lactic acid and alcoholic fermentation.

Microbial fermentation processes have been manipulated by humans and are used extensively in the production of various foods and other commercial products. Lactic acid fermentation is employed by certain gram positive bacteria including Lactobacillus, Streptococcus etc. These genera of bacteria are called Lactic acid bacteria (LAB).

During cheese production, the bacteria digest the milk sugar (lactose), producing lactic acid via fermentation. The highly acidic environment generated by lactic acid fermentation denatures protein contained in milk (casein), causing it to solidify.
