Water contains different particles in it depending on where the water came from as these particles dissolved into the water as the water passed through.

There is a limit to how much particles can be dissolved in water though much like when you put too much sugar into water and at some point the sugar just settles at the bottom.

This is the same with those solutes in water. After a point where the water can no longer dissolve them, they come together and create minerals that are seen when the water evaporates.
