Homeostasis refers to the maintenance of relatively constant internal body processes by homeothermic organisms.

The internal body processes of homeothermic organisms need to be stable irrespective of their environment.

The normal range of operation of body processes is called set point.

Once the normal range of operation of a process is breached, the body system has to adjust in order to return to the normal range.

Thus, if a person eats a bag of salty chips leading to a rise in their blood sodium, the body will have to find a way to either metabolize or excrete more sodium in order to return the blood sodium level back to the set point.
