I would create what was right in front of me. i love to draw from reference and so drawing realistically from the sight in front of me would be fun i think, and as a plus you don’t have to focus on anything else other than the reference in front of you. and to think that at the end you would have a drawing of the place you had a new experience :) i would probably want to do it in an area with lots of buildings like NYC or Seattle
