This is because clearing vegetation increases water runoff after precipitation. High surface runoffs give little time for water to percolate into the ground and replenish the ground table. Vegetation stalls this runoffs and gives the water time to seep into the ground.  Most of the runoff waters run off into the oceans.

The natural environment was changed, population densities grew, and people ate more vegetable and cereal foods in their diet. Hierarchies developed in society. Grain was stored, and could be traded. Surplus production from good crop yields helped societies survive bad years.
