You can infer that they did not understand what was happening. They were almost in a trance, you could say. They didn't realize the severity of the situation.

Answer:

You can infer that each character has had different experiences with ships and therefore have different perspectives of what the loud noise was. As a Steward, James Johnson knows the most about the ship compared to the three of them, and connects the sound to a mishap of the ship and thinks that it means they have to make a trip to Belfast. Night Baker Walter Welford was startled by the noise because the jolt that accompanied it caused a pan of rolls to fall off the top of the oven. Marguerite Frolicher connects the noise to something familiar to her- ferries making a sloppy landing.

The retirement homes are able to provide them with supervision, proper nutrition, and medical care on an "as needed" basis. This allows the elderly's family members to be able to come and visit, while knowing that their relative is being well taken care of.
