Know that in the Bible it says "man shall not eat the fruit" so technically when eve took the bite, she still didn't know it was bad until when Adam took the bite and he realized what he has done, that's when eve realized what she has done. If it were to say "man and woman" then the whole story would be so different. The Bible would be different as well.
