Antithesis means opposite which emphasizes the contrast. It is a literary scheme in which two opposite ideas are placed together in a sentence to accomplish a contrasting effect. Patrick uses two contrasting words 'empty' for wallet and 'full' for plate in his final statement. The juxtaposition of empty and full creates a statement which makes it highly impactful.
He promises immortality because he says that she shall live as long as the sonnet exists and as long as their love exists, and since the sonnet will exist forever just the same as their love, she will be metaphorically immortal.
