Huevos - 5 unidades

Harina - 250 gramos

Azúcar - 250 gramos

Leche - 50 mililitros

Aceite de oliva - 50 mililitros

Levadura - medio sobre

Esencia de vainilla o azúcar vainillado

Ralladura de un limón

Explanation:

Comenzamos poniendo el horno a precalentar a 170º. Colocamos papel de horno en la base del molde y engrasamos los lados con mantequilla. Reservamos.

Abrimos los huevos y separamos las yemas de las claras. Añadimos una pizca de sal a las claras y batimos. Cuando empiece a tener textura de espuma, echamos la mitad del azúcar y seguimos batiendo hasta conseguir el punto de nieve. Reservamos

Ahora cogemos el resto del azúcar y se lo incorporamos a las yemas. Batimos hasta conseguir una mezcla blanquecina y ligeramente espumosa. Añadimos la leche, el aceite, la vainilla y la ralladura de limón y seguimos batiendo.

Mezclamos la levadura y la harina. Incorporamos a la mezcla, tamizando. Lo haremos poco a poco y sin dejar de remover. Cuando la mezcla sea homogénea, llega el momento de incorporar las claras al punto de nieve. Lo haremos poco a poco, mezclando con movimientos envolventes.

Vertemos la masa en el molde. Horneamos durante 45 minutos. Pinchamos el bizcocho para comprobar que esté hecho, si la aguja no sale limpia, horneamos unos minutos más. Cuando esté hecho, dejamos templar durante 15 minutos y desmoldamos.
