This extracts the flavor, aroma, color, body, and nutrients of the ingredients. stock is made from simmering bones with vegetables, minimally adding herbs & salt to let the true flavor of the simmering, also stock can also be boiled to eliminate some of the liquid, which thickens the stock and intensifies the flavor.
