Are the topics randomly given to you, or are you able to choose one? If you're able to choose, I would definitely pick something you're interested in already, ahead of time, and maybe even do some quick internet research about it.
Otherwise,
- If you have to stand in front of people and look at them, a good tip for seeming like you're making eye contact is to not look at their face but instead to fixate on a point a bit above their head. You won't have to make eye contact, and they can't tell the difference.
-If you fidget when you're nervous, do it with an object behind your back so people won't see it.
