Like i said it is not plural so you take out the plural ones that have a S at the end. You are left with simpático and simpática. Since she is a girl/woman, then it needs to end with an A. To be final you take out simpático and you are left with simpática. I hope this helped, I'm not so good at explaining sorry!!
