I'm not familiar with the cajun carnaval, but I do know stuff about the winter carnaval here in Quebec.
To start, there is a character which represents the carnaval, Bonhomme Carnaval. He's a snowman wearing a sash (traditional element worn by francophone settlers). Oh, and he also has a red bonnet (also worn by the francophone settlers).
A lot of winter sports and competitions happen during the carnaval (you can say that it's cultural since the territory gets snow). E.g. canoe racing, ballon-balais, hockey (of course!), ski, etc...
Ice sculptures are also made (a few years ago they even made an ice hotel). *There is also an ice palace [for the Carnaval snowman].
Although maple syrup is harvested in spring, some people buy it in cans and do some mapple taffy on snow.
*Not to forget that there is a parade (it's a carnaval) and that [due to the presence of the catholic religion in Quebec] the carnaval is linked to Mardi Gras.

It depends if what u want to say will happen a few minutes in the future or a few weeks in the future. For simple future, u conjugate aller and put that in front of the verb.
Par exemple: Je vais fait du foot.
Or for ur example, it would be, Nous allons aller à la pêche
