Answer:

Zaroff behaved the way that he did because he wanted to let Rainsford know that he knows where he is that he will come after him later on. Finding Rainsford made Zaroff smile. I smoke ring is deliberate to tell Rainsford that Zaroff was there and that he left his mark. At the end, Zaroff walks carelessly to show how defeating Rainsford will be so easy that he does not even have to be careful around him.
