But the difference is they both have different chemical make up and grown in different environment.
Sugar Cane is grown in tropical zones like Florida, Hawaii etc.. They can also be cut off the middle and harvest the other half for extract. Whereas
Sugar Beat is grown in temperate zones and are rooted in the ground which can be picked for extract. But has to be replanted which takes a while then sugar cane.

But in this case, they are in the lysosomes where they are safe and at a lower pH so when the vesicles open they can emit hydrogen ions and the lysozyme to digest the foreign material.
