Lysozyme which is found in the lysosomes. They function at a relatively low pH and are so because if they functioned at physiological pH they would digest the cell. But in this case, they are in the lysosomes where they are safe and at a lower pH so when the vesicles open they can emit hydrogen ions and the lysozyme to digest the foreign material.
The enzyme pepsin functions with a very low pH of around 2. It is found in the stomach, with the acidity coming from the hydrochloric acid present there. it breaks proteins into amino acids.
Amylose is less soluble in water. It does not form a gel when hot water is added. Amylose constitutes about 20-30% of the starch. Amylose can be hydrolyzed with α amylase and β amylase enzymes completely.
