Why is the iambic pentameter particularly useful in Shakespeare's drama macbeth

It showed how refined his characters were. It tended to show a more eloquent way of speaking. The way iambic pentameter  works is a combination of 5 stressed and 5 unstressed syllables its almost chant like which shows the witch sisters almost hypnotic way of speaking. It allows us to know they are witches.

Mercutio is saying that when Romeo is joking with his friends he is his true self, and he is better off than when he is groaning for love because when he is in love he acts like an idiot.
