I think it depends on the instructor. Some can't explain very well and tend to talk relatively fast to get everything done on time. Some people can't write as fast and for good note-taking I suggest write down the things you know you will probably have trouble with overtime and should word things the way you can understand it. It's good if the instructor tends to make sense in your brain, but it's just not relatively possible unless they repeat it or go slower countless times.
