If you don't have a blast chiller, the best alternative to safely cooling food is to put it in the refrigerator.

What is a refrigerator?

One of the most expensive appliances in our home is the refrigerator. By forcing a liquid refrigerant through a vacuum-sealed system, which causes it to vaporize and draw heat from the refrigerator, it keeps food and beverages cold. The refrigerant is then passed through coils outside the refrigerator after it has vaporized.

This warms the vapor and turns it back into a liquid. Contrary to earlier times, when doing so required a significant amount of work, refrigerators today make it simple to preserve food. Now, food that would have perished on the counter in a few hours will keep for a few weeks in the refrigerator.
