*Glycolysis produces pyruvate, a molecule able to cross the envelope of the mitochondria where it undergoes complete oxidation during the Krebs cycle (aerobic). *The fermentation occurs in a medium without oxygen, an anaerobic medium. This metabolism replaces cellular respiration and allows, following glycolysis, to recycle reduced R 'transporters (R'H 2).

Small reminder, glycolysis is the degradation of a molecule of glucose into two molecules of pyruvate. This is the starting point of fermentations
