Drinking too much water (and its absorption) causes dilution of electrolytes (ions and anions) in the body. If the body does not bring back the homeostatic balance (by shedding much water through urine), there could be an imbalance (hyponatremia) that could affect your muscle and nervous system that depends on electrolytes to function. Your nerves require sodium ions to transmit an impulse while your muscle cells require calcium ions to enable their contraction, hence one of the symptoms excess hydration will be frequent cramping.
