The person going over the recipe is the speaker, grammatically expressed by the personal pronoun "I". In English sentences, the doer of the action must be the subject of the main clause that follows.

"After going over the recipe, it seemed (...)" has a double subject: The pronoun "it" and the clause "the cake would be easy to make". Then the sentence "the cake seemed easy after (...)" is not a natural construction. It sounds odd. What is more, the last version with the parenthetical content also sounds odd because it does not mention who finds the cake easy to make.
