Because water is a polar molecule, it makes an excellent solvent for polar and ionic <span>compounds found within cells and tissues. The polarity of water (H2O) allows it to dissolve a wide array of biological materials in the body. First, it can dissolve other polar substances such as sugars and glycerol. Second, it is also a good solvent for ionic compounds that dissociate into ions, which water molecules are attracted to as well.</span>

The word missing is ionic. Ionic compounds are soluble to water. They are soluble because water is a polar molecule. Water has a positive end and a negative end. These ends attract ionic compounds. However, not all ionic compounds are able to dissolve in water.

Why are protists considered the precursors to the eukaryotic diversity of life on the planet today

The protists belong to the kingdom Protista that comes under the domain Eukarya. Protists are a very broad group, comprising of various eukaryotes that do not fit into the other kingdoms, like animals, plants, and fungi. The protists were the initial eukaryotes.  

They would go on to become the precursors for each of the other eukaryotic kingdoms. By examining protists one can witness the transformation between the single-cell prokaryotes and modern multicellular eukaryotes.
