we consider here price of sandwich is = y

and number of extra vegetable is = x

when we see on graph for 3 extra vegetable for $5.25 it is as passes through the point (3, 5.25)

and for 5 extra vegetable for $6.25 than it is as passes through the point (5,6.25)

so these equation will be when line passes through two points is

y - y1 =  \frac{y2 - y1}{x2 - x1}(x - x1)    .............1

wee take here point (3,5.25) and (5,6.25)

so that here equation of line will be as

y - 5.25 = \frac{6.25-5.25}{5-3}(x-3)      

simply it we get

y = 0.5 x + 3.75

now we put here x = 0 to get y intersection

y = 0.5(0) + 3.75

y = 3.75
