In the stomach, there is the action of gastric juice, consisting of hydrochloric acid and the enzyme pepsin, which acts on protein digestion.  In the small intestine, the food undergoes the action of substances produced by the pancreas (alkaline substance containing trypsin and chymotrypsin, enzymes that act on proteins) and by the liver (bile, which contains salts that act on the digestion of fat, is produced by liver but is stored and concentrated in the gallbladder).
