That change would be the formation of a V-shape channel. It starts from the streams in the mountains where the land is very steep. Because of the very steep slope, the mountain stream would flow very quickly that causes a lot of erosion and less deposition. The faster the moving water digs down into the stream bed, the more it makes it deeper.
