Pepsin. Digestive enzyme that degrades food proteins. It is secreted by the cells of the stomach walls. It is released in the form of pepsinogen.
When pepsinogen is exposed to hydrochloric acid in the stomach, it unfolds and decomposes in pepsin. Pepsin breaks down proteins into smaller portions (polypeptides) and amino acids, without degrading it by birthday, a function performed by other enzymes in the intestine. Pepsin is secreted by the cells of the gastric mucosa. It requires a low pH or acidic pH to function; the appropriate ph ranges between 1.5 and 2.5.
