It means it has an ordered arrangement of atoms or ions.

As salt is an ionic compound of Sodium and Chlorine, it is formed through ionic bond. It has ions of sodium and chlorine attached in a set of pattern.

If we draw the ionic structure of salt, we will see how one sodium atom is attached to 6 chlorine atoms in center and chlorine atoms are placed in each corner and middle of a cube.

This pattern keeps on repeating for each molecule of NaCl. Thus forming crystals hence atoms in salts follow a pattern.
