Which profession became formal and more respected under french oversight?

Chefs and cooks became much more respected in French culture. Before this, the concept was more slipshod, and cooks were simply seen as who created the food. The idea of it being almost an art form that required extensive professional study and training was really unheard of before the French culture adopted these measures.
