Well, because it plays such an important role in problem solving. Science is all about solving the problems, puzzles and riddles of this world and universe, and to do that, we elaborated something called the scientific method.

The scientific method is a method we follow to encounter, solve and understand certain problems. A famous example would be the "broken torch example":

Torch doesn't work → is it the batteries? → we try replacing the batteries

            ↓

or is it the circuit?

            ↓

we have concluded that it is not the batteries

            ↓

we try finding the problem in the circuit

            ↓

         etc.

As you can see, in the example, the 2 possible problems that would explain why the torch isn't working, are our 2 hypothesis.
