Prejudice is an opinion that was preconceived and is not based on reason or experience. Not liking someone is usually because a quality that person has, you do not like. Wether it be their attitude, hair appearance, something (all of which are reasons). Disliking someone has a reason because noone ever dislikes a person just because. Theres always a reason, big or small.
Prejudice is usually pre-judging someone before you actually know that person or spoken to that person where as not liking someone usually links to a certain trait or quality they have that you don't like. So disliking someone is more personal or intimate where as prejudice is just judging people without acknowledgment.
