Basically, it's when something is touching something else. In this case, the spoon was physically touching the ice cream, so it's conduction, not convection.

Convection is related to air currents. When hotter, and therefore, less dense material rises and colder, denser material sinks, both due to gravity, this will result in the transfer of heat energy. It's how the ocean has currents, and is the reason that convection ovens don't need to preheat when cooking food.
