Well mutations are changes in the DNA sequence.

Mutations are caused by a number of things such as; radiation(including UV), copy errors, chemical mutagens, viruses, and crossing over during meiosis.

Why mutations affect these organisms more than others is that these organisms are exposed to such things that cause mutations far more than other organisms.
