I hate to say it, but your editorial is going to sound very school newspaperish if you use 1st person.
Blanched or airdried potatoes
Flat: described by one or two traits
Static: doesn't change from the beginning of the story to the end
Dynamic: a character that develops throughout the story
Round: complex and fully developed character
