The minimum temperature to prepare beef is 125ºF, becoming rare.

The ideal average temperature for cooking is 150ºF being medium.

The other two are 160 °F and 165 °F being well done

125ºF , 150ºF,  160°F, 165°F

Notice de minor diference of temperature between the third and forth beef, that is to make sure the meat wont burn and become uneatable.
