To cook food safely, a minimum and maximum cooking temperature was determined. This may vary depending on the food in question but we can use beef in this case to exemplify.

The minimum temperature to prepare beef is 125ºF, becoming rare.

The ideal average temperature for cooking is 150ºF being medium.

The other two are 160 °F and 165 °F being well done

125ºF , 150ºF,  160°F, 165°F

Notice de minor diference of temperature between the third and forth beef, that is to make sure the meat wont burn and become uneatable.
